Looking for a flavorful and healthy meal?

One of the blogs I follow, Rachel's Recipe Box, posted this recipe about a month ago. We have made it twice and it is one of the most tasty, yet healthy, meals I have ever eaten. We made a slight change to her recipe, which made it even more healthy. We boiled the chicken first and cut into cubes (or shredded if you prefer). When sauteing the garlic and onions I only used half the olive oil it called for and no butter. Then, I skipped the chicken part and added the veggies with some apple juice instead of deglazing with it later. I then added the boiled chicken with the crushed tomatoes. We served ours over brown rice, but it could be served over noodles or just by itself. Miss M had 3 platefuls last night and Miss G kept asking for more squash and mushrooms. I willingly obliged to both girl's requests because what parent is going to say no to their child eating more veggies?
