Playdate - for moms and kids

This morning G had a play date, and I got to have some much needed girl time with my mommy friends. Here is a picture I got of all three 2 year olds actually stopping to semi-pose for a picture.


We had a yummy Thai lunch, pasta salad, fruit, and cookies.

Here is the recipe for the main course:

Nutty Noodles:
Prep time: 10 minutes Cook time: 10 minutes (it actually took about 20 min., but I doubled the recipe today)

Ingredients:
8 oz. multigrain thin spaghetti
1 cup crinkle-cut carrots
2 cups frozen shelled edamame
1 cup snow peas, trimmed and halved lengthwise
1/2 cup Thai peanut sauce
2 Tbs. creamy peanut butter
2 Tbs. reduced-sodium soy sauce
Optional - chopped fresh cilantro and coarsely chopped dry roasted peanuts

Bring lightly salted water to a boil. Add noodles and carrots, return to boiling and cook 5 minutes. Stir in edamame and snow peas; cook uncovered, for 3 to 5 minutes longer or until noodles and vegetables are tender. Drain and return to saucepan.

In a medium bowl, mix together peanut sauce, peanut butter, and soy sauce until it's smooth. Stir the peanut sauce into the pan with the noodles and veggies. Sprinkle on the cilantro and peanuts.

I had such a good time and loved lunch. I told Jarod about it and I hope he likes it but it would be great protein for him. I'm so glad Allie got to play with her buddies. Hopefully we can get them all together again soon
